Vinification:

Alcoholic and malolactic fermentations occur naturally. 50–60% of the must is vinified in French oak barrels (average age 6 years), with the remainder in small stainless steel vats.
Maturation:
14–15 months total, including 5–6 months on fine lees in old French oak for 50–60% of the wine. Final ageing completed in stainless steel vats to preserve freshness and minerality.
